2-3 fresh cucumbers
5-6 boiled eggs
1small bunch of green onions
2-3 tbsp of mayonnaise (Blue Plate, if you have it)
salt to taste
4 large potatoes, boiled
2 medium carrots, boiled
4 medium dill pickles
4 eggs, boiled
1 can of green peas
1 lb bologna, turkey or chicken breast, or ham -- select your favorite; I usually use pre-sliced bologna to save time.
2 tbsp olive oil
1 small red onion, finely chopped and sauteed in olive oil until golden
mayonnaise, salt -- to taste
Preparation:
Cube cucumbers.  Chop eggs using egg chopper.  Finely chop onions.  Mix cucumbers, eggs, and onions.  Add salt to taste.  Add mayonnaise and mix all ingredients.
Serving Suggestion:
Decorate with fresh parsley.  Serve with roasted, baked, or fried chicken and fresh crusty bread, breadsticks, or rolls. 
Preparation:
Cube vegetables, eggs, and meat.  Add peas, sauteed onions, mayonnaise, and salt.  Mix all ingredients.  Taste.  If necessary, add more salt and/or mayonnaise.

Serving Suggestion:
Decorate with fresh parsley, dill, green peas, shredded egg yolk, pickle slices, or flowers made out of boiled eggs or carrots -- use cookie cutters.  Use your imagination.  Tastes great with fresh bread.

1 cup (stick) Crisco butter flavor shortening
1 cup (8 oz) sour cream
5 cups plain flour
1 cup mango paste
6 oz cream cheese
1 cup butter
2 cups all-purpose flour
2 eggs
1 cup brown sugar
1 can Solo Apricot Filling
1 cup chopped nuts

Blend cream cheese and butter into flour with a pastly blender.  Form into 48 1" balls.  Line miniature muffin pans with balls of dough and shape into crusts.  For filling, combine eggs, brown sugar, Solo Apricot Filling and nuts.  Spoon into individual crusts and bake at 350 F for 20 minutes.  Cool in pan.
Mix flour with shortening.  Add sour cream and knead into a ball.  Divide dough into 5 balls.  Roll each ball into 1/8 inch thick circle.  Cut each circle into 2x2 inch squares.  Put 1/8 teaspoon of mango paste on each square.  Join four ends of square in the middle.  Bake at 350 F for 20-25 minutes.  Sprinkle with powdered sugar.

1 quart fresh strawberries, washed and dried -- do not remove stem
8 ounces cream cheese, softened
3 tablespoons powdered sugar
1 tablespoon orange juice
mint leaves for garnish
8 large eggs
1 quart fresh milk
4 tbsp sugar
1 tsp salt
1 cup flour
1/4 lb butter

Melt butter in 12x16 pan.  Mix milk and eggs lightly with beater.  Add sugar, salt, and flour.  Pour mixed batter over melted butter.  Bake at 450 F  for 20-25 minutes.  Serve with syrup, jelly, or whipped cream.

Cut recipe in half for 9x13 pan or in fourth for 8x8 pan.
Beat cream cheese until fluffy.  Add powdered sugar and orange juice.  Fill a cake decorator tube with mixture.  From the point, slit each berry into quarters -- do not cut through the bottom.  Pipe cream cheese mixture into the berries.  Arrange on a serving tray and garnish with mint leaves.
